- 1 onion
- 1 lb of ground turkey
- 1 10.75 oz. can of tomato soup
- 1 14.5 oz. can of diced tomatoes
- 1 11 oz. can of Mexicorn
- 1 15 oz. can of kidney beans
- 1 packet of taco seasoning
- 1 cup of V8
- reduced fat cheese
- light sour cream
- whole grain tortilla scoops or strips
- hot sauce
I highly suggest buying organic and no salt added versions of the canned goods. Try a low sodium version of taco seasoning. Also, rinse the beans and Mexicorn before adding them to the soup to remove any excess sodium.
Brown the turkey, and rinse to remove excess fat. Chop and saute the onion. Add turkey and onion to a large pot, and then dump the rest of the ingredients into it. Cover, and let the soup cook for approximately 30 minutes on medium heat and then simmer for 30 additional minutes on a low setting.
